Using your slow cooker is a hands-off way to get dinner on the table, but if a recipe’s cooking time isn’t long enough to jive with your workday hours, it’s not all that helpful. Enter: this cabbage and potato soup, which requires eight hours in the slow cooker. Set it up before you head out the door and come home to a warm, wholesome meal.
To get this soup going in the morning, you’ll just need to allow for 15 minutes of prep time. Setting your morning alarm 15 minutes earlier might seem like a bummer, but what you lose in precious sleep time you gain exponentially in chill time when you get home from work and don’t have to worry about making dinner.
Once you’ve chopped your potatoes, onion, cabbage, and sausage, you add them to the slow cooker with canned crushed tomatoes and chicken broth, spices (Italian seasoning, garlic powder, chili powder, paprika), and dried white navy beans. Set everything to cook for eight hours on low and then go about your day.
When you get home all you have to do is season the finished soup with salt and pepper to taste, ladle some into a bowl, and dig in. A dollop of sour cream and a sprinkle of fresh parsley would do wonders here as well. And the best part? It yields around six servings, so you should have some leftovers to take for lunch. Win-win!
